We visited Edelweiss Cooking School on a rainy afternoon in Salzburg and had a wonderful time! We had soup for lunch and then learned how to make Apple Turnovers. We got to eat them after they finished cooking and they were delicious. Johann was so fun and made our cooking experience easy and memorable. Highly recommend for anyone visiting Salzburg!

Entering the cavernous room that is the Eidelweiss Cooking School, I was filled with excited anticipation. How is the world famous Apple Strudel made? What on earth is Salzburger Nockerl? I wonder how authentic the Beef Goulash would be?

Our Salzburger Nockerl was made according to the traditional recipe, as we were serenaded by Peter Alexander's Salzburger Nockerl song. 10 minutes in the oven and our 3 Salzburg mountains are ready to be devoured. 5 minutes later and we're rolling out of the mountainous venue!
Johannes' is an accomplished and delightful host. I can't recommend an afternoon of gastronimic gluttony highly enough.

I spent a wonderfully fun morning in Johann's kitchen, set in a historic guardhouse at one of Salzburg's ancient gates, learning to make apple strudel and Salzburger Nockerl. This is no "watch the chef" class - Johann immediately put you to work, so you really learn how to work the dough, what it should look and feel like, and how to successfully create a delicious strudel wrapped in paper-thin dough. The true test was after I returned home and was able to reproduce a strudel on my own (he supplies the recipes when you take the class). The Salzburger Nockerl was a revelation - the most delicious souffle-like dessert, requiring only about 5 minutes of preparation. Johann is friendly and a wealth of information about pastry, Austrian cuisine and culture, and a real pleasure to spend a couple of hours with. I strongly recommend his class to anyone who wants to be able to recreate delicious Austrian baking when they return home.
